If you are on Facebook or Pinterest you have probably seen the amazing before and after photo of Andie Mitchell. Her amazing transformation is inspiring. Her new cookbook, Eating in the Middle: A Mostly Wholesome Cookbook shares some recipes that enable her to maintain her over 100 pound weight loss.
Eating in the Middle is a beautiful cookbook with gorgeous photos displaying healthy and filling meals. It’s all about flavor and using fresh ingredients. The halibut baked in parchment with pistachio mint pesto looks amazing (and you know I’m trying to figure out how to use my favorite kitchen tool to make it). Andie Mitchell adheres to the “everything in moderation” motto to maintain her weigh loss and it’s reflected in her cookbook which includes decadent desserts. When you eat somewhere in the middle you can occasionally indulge in rich desserts without fear of gaining weight. I love the philosophy and try to adhere to eating in the middle.
